
Tomato soup with pickles
Description
Perfect for lunch. Solianka is very easy to prepare, and if you have ready-made meat broth, it's quick too. If your tomato paste is too sour, it makes sense to add a little sugar to the soup. I cook solianka with rice. The soup turns out much more delicate and tastier than with barley. Plus, cooking barley takes a lot of time. My solianka isn't sour, so it's suitable for children too. In that case, just don't add ground black pepper. Serve in bowls and enjoy.

Take the ingredients for preparing solyanka.

Place the sliced potatoes in a pot and pour in the broth. Start cooking the soup.

Finely chop the carrots and onion, place them in a pan with refined sunflower oil, and simmer over medium heat for 7–8 minutes.

Then add to the soup.

Grate the cucumbers on a grater or finely chop them. Place in a frying pan, add tomato paste and a little vegetable oil. Simmer over medium heat for 5-6 minutes.

Add previously rinsed rice to the solyanka.

When the vegetables and rice in the soup are cooked, add the pickled cucumbers with tomato paste. Season the soup with salt and pepper to taste. Cook for another 5 minutes and turn off the heat.
