
Sour soup with tomatoes
Description
A hearty first course. This soup is easy and quick to prepare if you have ready-made meat broth. You can also cook it in water, adding a bit more vegetable oil. Many people prepare it with pearl barley, but I prefer it with rice, not to mention that rice cooks much faster. The soup is quite sour thanks to the pickled cucumbers, and tomatoes add extra acidity, so in this case it's important not to overdo the cucumbers—one is quite enough. The soup is tasty, filling, and aromatic. Serve with fresh herbs and sour cream.

Prepare all the ingredients for making solyanka.

Peel the potatoes, wash and cut into cubes. Place them in a pot and pour in the broth. Put the pot on the stove and start cooking the soup.

Peel the carrots and onion, wash and chop them. Place in a frying pan.

Pour refined sunflower oil and sauté these vegetables in a skillet over low heat for 7-8 minutes.

Place the carrots and onions in a saucepan. Cook the vegetables for 10-15 minutes, then add the rice, which should be thoroughly washed.

Finely chop or grate one large cucumber. Chop the tomatoes any way you like. You can remove the skin beforehand by pouring hot water over the tomato.

When the vegetables and rice are cooked, add the pickled cucumber and tomatoes to the pot. Season with salt and pepper to taste. Cook the soup for another 10 minutes, then turn off the heat.
