
Chicken and rice solyanka soup

Perfect for lunch. I think this is quite a simple recipe for solyanka soup with chicken and rice. All the cooking steps are typical for any soup. However, you can vary the ingredients to your taste. For example, I added chili pepper to my chicken and rice solyanka for some spice—I like it better that way. The weather is so gloomy and wet now that you really crave something hot. Rinse the rice and soak in cold water for at least 1 hour.

Place washed chicken thighs into a saucepan, cover with water, and bring to a boil, skimming off the foam. Then reduce the heat and simmer covered with a lid.

Peel the onion and slice into half-rings. Wash the carrot, peel and grate. Sauté the vegetables in vegetable oil, add a little garlic, salt and pepper to taste.

Remove the meat from the broth, which has been simmering for about an hour, and cut it into pieces. Add peeled and diced potatoes, rice, and chili pepper to the broth, and cook until the potatoes and rice are done, about 20–25 minutes. Add the canned vegetables during the last 5 minutes.

Finely chop the pickled cucumbers. Reserve one cup of brine. At the end of soup cooking, add cucumbers, brine, and meat cut into pieces to the broth.

Serve the ready solyanka in bowls and add sour cream. Done!
