
Barley soup with smoked sausage
Description
A hearty first course. Soup is especially suitable to prepare during the cold season; such soup will always warm and satisfy you. In addition to light chicken broth, we'll enrich the soup with smoky notes by choosing your favorite sausage. Barley will make the soup more filling. Besides carrots and onions, add a bit of sweet pepper to the sauté. You can use sour or pickled cucumbers. Serve the soup hot with sour cream, fresh herbs, and black bread.

Prepare all the necessary ingredients.

Pour two liters of water into a saucepan, bring to a boil, and add the chicken fillet. Simmer the broth over low heat for 30 minutes, then add bay leaf, salt, and pepper to taste. Skim off any foam that forms.

Now peel and wash the potatoes, then cut them into medium-sized cubes. Add the potatoes to the broth and cook for another 15 minutes.

While the potatoes are boiling, prepare the vegetables—peel the onion, carrots, and pepper. Dice the onion, grate the carrots on a medium grater, and cut the pepper into small pieces.

Cook the barley separately. Pour water over the grain (150 ml of water for 70 grams of grain). Cook the grain for 25–30 minutes.

Heat vegetable oil in a frying pan, add onion, carrots, and pepper first, and fry for 10 minutes, stirring. Then cut smoked sausage into cubes and add to the pan. Also cut gherkins into small pieces and add to the pan.

Mix the tomato paste with water, about 70 ml. Fry the vegetables with sausage and cucumbers for 4-5 minutes, then add the tomato mixture and a pinch of sugar to balance the flavor. Simmer everything for 5 minutes, covered.

Transfer the sautéed mixture from the skillet to a pot, add the cooked barley, and bring to a boil. Taste and add salt and pepper if needed. Simmer the soup for another 5 minutes, then remove the pot from the heat and let it steep for 15 minutes.
