
Lentil and meatball solyanka soup
Description
The soup is easy and quick to prepare. A very tasty and healthy soup for a hearty home-cooked lunch. This is a fairly popular first course. The flavor of pickled cucumbers gives the soup its special touch. You can add a little sour cream to each serving. Serve with fresh herbs and sour cream.

Step 1

Bring the water to a boil. Roll the meat mixture into balls and drop them into the boiling water. Skim off the white foam as it appears.

Add the sliced potatoes and rinsed lentils.

Separately sauté the chopped onion and carrot. Add the sautéed mixture to the soup.

Add the marinated cucumbers, grated on a coarse grater. Season with salt to taste. Simmer everything together for another 15 minutes. At the end of cooking, add some chopped dill.
