
Rossosh-style solyanka soup
Description
If you don't like barley, feel free to replace it with rice. For making solyanka soup, use cucumbers that are not too sour. Serve the solyanka with sour cream. Ladle into bowls and serve.

Prepare the ingredients.

Place the chicken wings, diced potatoes, and rinsed pearl barley into a saucepan.

Pour in all the water, add salt. Place the pot over heat. Simmer the broth for 40 minutes. As soon as it begins to boil, don't forget to skim off the foam.

Cut the bacon, onion, and cucumber into cubes. Grate the carrot on a grater.

Heat vegetable oil in a skillet, add the chopped ingredients.

Simmer everything over medium heat for 3 minutes, then add tomato paste. Mix well.

Add the prepared sautéed vegetables to the rassolnik.

Pour the brine into the pot as well. Mix well. Cook the soup for another 5 minutes. Then turn off the heat and let it steep for at least 10 minutes.
