Description

The soup is easy and quick to prepare. This version of rassolnik turns out more piquant than the usual one thanks to the addition of garlic. If desired, you can add bay leaf, pepper, and sugar to balance the flavor. Add the brine in portions to taste, as pickles vary in saltiness. Serve in bowls and enjoy.

    Prepare all the necessary ingredients to cook Kuban-style solyanka.

    Rinse the beans, soak them in warm water for 4 hours. After that, simmer over low heat until cooked through, for 1.5–2 hours.

    Prepare the offal. Trim all fat from the heart, remove ducts and pelvis from the kidneys, and rinse thoroughly.

    Boil the kidneys and heart in separate pots, discarding the first water after boiling. Cook the offal for about 1–1.5 hours until done. Remove the cooked heart and kidneys, and strain the heart broth through a fine sieve.

    Pour the broth into the pot with boiled beans and add the sliced offal. Season everything with salt and bring to a boil.

    Peel the potatoes, rinse them, and cut into medium-sized matchsticks. Place the potatoes in a pot. Cook over medium heat for 15 minutes.

    Peel the onion and chop it. Pour vegetable oil into a frying pan, add the onion, and sauté over medium heat for 5 minutes.

    Cut the pickled cucumbers into thin strips and place them in a frying pan with the onion. Fry for 5 minutes.

    Pour 100 milliliters of broth from the pot into the skillet and simmer over low heat for 10 minutes.

    Add tomato paste to the pan, sauté over medium heat for 5 minutes. Pour in the cucumber brine and simmer for 3 minutes.

    Transfer the sautéed mixture to the pot with the beans and cooked potatoes. Bring everything to a boil.

    Rub the bacon with garlic into a homogeneous mass and add it to the soup. Mix and bring to a boil, then cook for 5 minutes.

    Add chopped greens to the Kuban-style solyanka. Remove from heat, cover with a lid, and let stand for 15 minutes. Adjust the soup's seasoning with salt and, if necessary, add sugar to taste.
