
Pork solyanka soup

Wash the pork ribs and cut them into pieces between the rib bones.

Place the pork ribs in a pot and cover with water. Bring to a high heat; when the water boils, skim off the foam, reduce the heat, and simmer gently.

Rinse the pearl barley in several changes of water until the water becomes clear, then cover with cold water and set aside to soak.

Peel the potatoes and cut into medium-sized cubes.

Peel the onion and cut into small cubes.

Peel the carrots and grate them on a coarse grater.

Fry the onion in refined sunflower oil until translucent. Add the grated carrot to the pan with the onion. Mix and sauté over medium heat.

Cut the pickled cucumbers into small cubes

Add the sliced cucumbers to the pan with the onion and carrots. Mix and sauté for a few more minutes. Remove the cooked mixture from the heat.

When the broth is ready, add the potatoes. Then add the prepared barley. Place the pot over heat, bring to a boil, then reduce the heat and cook the soup until the potatoes and barley are done.

When the potatoes and barley are fully cooked, transfer the sautéed vegetables along with the oil they were fried in to the soup. Mix well and simmer for 5 minutes over low heat. Pour the cucumber brine into the soup, stir, and cook for another 3 minutes.

We wash and chop the dill.

Add chopped dill, bay leaf, and ground pepper to the soup to taste. Remove from heat and let it steep for 10 minutes.
