
Beef solyanka soup
Description
My husband likes this kind of soup more than any other. Plus, this recipe comes straight from my childhood, and sometimes it's so nice to dive back into those taste memories. And I'd like to share it with you too.

Rinse the beef, then place it in a large pot and cover with water. Bring to a boil. Add one peeled onion, peppercorns, sliced celery root, and a bay leaf. Simmer the broth for 1.5–2 hours. Skim off the foam.

Then strain the broth, leaving only the liquid. Bring it to a boil again. Add cubed potatoes and sliced meat.

Finely chop the onion and carrot. Sauté the vegetables in heated oil for 10 minutes, stirring. Then add tomato paste to the pan. Cook for another 3 minutes. Pour in a ladle of broth and boil the mixture for another 2 minutes.

Add the sautéed vegetables and cucumber cut into pieces to the broth. Add salt and pepper to taste. Cook the soup for another 6 minutes.

Let the finished solyanka stew for about 15 minutes under the lid. Serve the dish with fresh herbs and sour cream.
