
Clear soup without sautéing
Description
The soup is simple and quick to prepare. This рассольник is very easy and fast to make. My version of рассольник doesn't use barley, but rice instead. This significantly reduces cooking time, and I also prefer the taste. Unlike the classic рассольник, I don't make a sautéed base. This recipe is quite diet-friendly and suitable for anyone who should avoid fried foods. If desired, you can add sausage or smoked sausage, but obviously, then the рассольник will no longer be diet-friendly and will resemble a meaty солянка. I don't use pickle brine in this soup. Those who dislike sour soups will agree with me. You can add a bit of garlic. The soup is ready to serve.

Prepare the ingredients for making rassolnik.

Pour any meat broth into a saucepan and add diced potatoes. Place the saucepan on the stove.

Finely chop the onion and carrot and add them to the pot.

After 15-20 minutes, add the washed rice to the soup.

When the vegetables and rice in the soup are cooked, add the chopped or grated pickled cucumber. Season the soup with salt and pepper to taste.
