
Spicy Creamy Chickpea Soup
Description
The soup is simple and quick to prepare. Spicy chickpea soup-puree is a very unusual and original soup with a distinct oriental flavor. Personally, I especially love this spicy, thick, and hearty soup in winter, during cold weather. You come home from the frost, eat a bowl of hot chickpea soup-puree — pure bliss... Chickpeas need to be soaked in advance for 8-12 hours in cold water.

Soak the softened and swollen chickpeas in hot broth, place over heat and cook for about an hour. Meanwhile, prepare the other ingredients: peel the garlic, wash the pepper and cilantro.

Carefully remove the seeds and membranes from the chili pepper.

Toast the spices in a dry skillet for 1-2 minutes.

Then add a little oil to the pan with the spices, along with the chopped pepper and garlic. Fry for 2-3 minutes.

Drain about a quarter of the chickpea cooking broth into a saucepan. Add the sautéed mixture, bring to a boil, and simmer over low heat for 10–15 minutes.

Using a blender, turn the chickpeas with the remaining broth into a smooth pureed soup. Season with salt and mix the pureed soup with the broth in which the spices were cooked. Adjust salt, bring to a boil.

Make the dressing: mix sour cream, cilantro, a little lime juice, and grated lime zest. Blend until smooth.

Remove the pureed soup from heat and pour it into bowls. Add a little sour cream dressing to it—and serve. Enjoy!
