
Simple soup with noodles
Description
How many soup variations exist? Countless. I offer a simple version of a family-friendly soup. It's prepared on a poultry broth base with vegetables and pasta (in this case, vermicelli). Just 1 hour—and you'll enjoy a light and delicious meal with this hearty first course.

1. For the broth, you can use any part of chicken or turkey. I chose chicken legs, as they cook relatively quickly and are perfect for a child. So, place the meat in water, bring to a boil, skim off the foam, then season with salt and spices to taste. Simmer the legs for 30 minutes.

2. While the meat is cooking, chop the onion and carrot, then fry until golden brown. You can fry them in vegetable or butter oil.

3. Peel and dice the potatoes, then add them to the broth 30 minutes after the meat starts boiling.

4. When the potatoes come to a boil, add the sautéed mixture to the broth and cook for another 5-7 minutes. Then remove the meat, slice it into portions, and place it on plates (you can also slice it and return it to the common pot).

5. When the potatoes are almost ready, add the vermicelli or other pasta to them.

6. At the very end, add the bell pepper and herbs. Cook for a couple more minutes, then set aside (depending on the type of pasta you have chosen).

7. Let the soup steep for a while, then it can be served.
