    1. Preheat the oven to 180 degrees. Peel the onion and garlic, wash the eggplant and tomatoes.

    2. Cut the eggplant into 2-2.5 cm cubes, place in a bowl, add a little olive oil (2-3 tablespoons), salt, pepper, mix by hand, then spread onto a baking sheet lined with parchment paper.

Do the same with the tomatoes and onions—cut them into cubes and slices similar in size to the eggplant, place them in a bowl, add the peeled garlic cloves (do not chop them), drizzle with oil, sprinkle with salt and pepper, and mix well. Transfer to another baking sheet lined with parchment paper.

    4. Eggplants take longer to bake than tomatoes, so we use two baking sheets. Put the eggplants in the preheated oven for 15 minutes, then remove, stir, and return to the oven.
