Wash the chicken breast, pat dry, and rub with chicken seasoning; let it sit for about 1 hour. Then grill or fry in a pan for about 4–5 minutes on each side. Slice into strips.

Prepare the croutons: cut the bread into large cubes. Drizzle with olive oil, sprinkle with rosemary and garlic. Mix well and spread the croutons on a baking sheet lined with parchment paper. Bake for about 5 minutes, until golden brown.

Prepare the sauce: place egg yolks, mustard, lemon juice, and garlic in a bowl, and mix well. Then slowly drizzle in the oil, stirring continuously, until the sauce reaches a thick sour cream-like consistency. Add anchovies and spices to taste, and mix thoroughly. Refrigerate the finished sauce until thickened.
