Perfect for lunch. Chickpeas are rich in protein but considered hard to digest, so a long soaking time is essential. If possible, it's best to drain and replace the soaking water several times. Once the chickpeas are cooked, preparing the stew won't take long. Shortly before the chickpeas are ready, prepare a vegetable broth, then sauté all the vegetables, add the broth, chickpeas, and spinach. Let the stew steep for a little while—about 10 minutes—and delicious Spain is on your plate. Serve the soup hot.

First, prepare all the ingredients. It's best to soak the chickpeas overnight or for at least 8 hours.

Soak the chickpeas and cook them in a large amount of water for 2 hours.

20 minutes before the chickpeas are ready, prepare the vegetable broth. To do this, peel and coarsely chop the leek, celery, and carrots. There's no need to chop the onion. Pour 1 liter of cold water over the vegetables and place over heat. When the water comes to a boil, add black peppercorns and 2 thyme sprigs. Simmer for 20 minutes. Strain the finished broth through a sieve.

Prepare the vegetables for the soup. Slice the onion into thin strips.
