
Vegan borscht salad
Description
Perfect for everyday meals. I usually always prepare my vinaigrette as a Lenten dish, dressing it with vegetable oil. It's not necessary to use apples when making a Lenten vinaigrette, but in my opinion, they add a distinctive tartness that complements the pickled cucumbers. This vinaigrette is great both during Great Lent and for New Year's. Garnish as desired and serve.

Step 1

Prepare the ingredients. Boil the potatoes, beets, and carrots in advance. Let the vegetables cool down. Wash the apples.

Peel the apples and boiled vegetables. I recommend cutting the beet into cubes and placing it in a separate bowl, then coating it with vegetable oil—it will stain less this way. Cut the vegetables and apples into cubes.

Dice all the remaining vegetables, as well as the pickled cucumbers. Then mix all the ingredients and dress with vegetable oil. Add spices. Serve the finished Lenten vinaigrette chilled.
