
Vegan soup in 30 minutes
Description
Hearty and aromatic soup. If you're not fasting, you can sauté the vegetables in butter and add, for example, sausages to the soup. This soup takes only half an hour to prepare and turns out very light and delicious. Add spices to taste to make it more fragrant and even tastier. The soup is ready to serve.

1. Since the soup is not prepared with meat broth, place the chopped potatoes into cold water and bring to a boil. Skim off the foam, then season with salt and spices to taste. Simmer over low heat, while in the meantime preparing the sauté.

2. Fry the chopped onion and carrot in vegetable oil until golden brown.

3. Add the sautéed mixture to the boiling broth. I added sliced fresh tomatoes to make the soup more flavorful and aromatic. You can add any vegetables you like (zucchini, cauliflower, etc.) to taste.

4. When the potatoes are almost ready, add the pasta. If you prefer groats, feel free—add them right after the potatoes come to a boil.

5. Add the herbs at the very end. Do not overcook the pasta; remove the soup from heat when the pasta is still slightly firm. While the soup stands and cools a bit, the pasta will finish cooking.

6. Serve hot. This soup is great for detox days, during fasting, or as a quick meal.
