Perfect for lunch. Bean soups, thanks to the beneficial properties of this excellent legume, play an important role in our diet. After all, the plant-based proteins in beans can replace animal proteins and are even better absorbed by the body. Therefore, bean dishes are always healthy and quite filling. A vegetarian bean soup is a simple dish that won't take much of your time. You can use dried beans in the recipe, provided you soak them beforehand. However, any dish should not only taste good but also look appealing. Dried red beans will turn the soup dark after cooking, making it less visually attractive. Yet the taste and nutritional value remain the same. I prefer using canned beans. Serve the soup in bowls and enjoy.

    Prepare the ingredients for making a vegan red bean soup.

    Peel the potatoes, wash them, and cut them into pieces of any size, as for soup. Place them in a pot and pour in water. Put on the stove and begin boiling over medium heat.

    Peel the carrots and onion, rinse them. Cut the onion into small cubes and the carrots into thin slices. Place them in a frying pan with sunflower oil.

    Sauté the vegetables, stirring, over low heat for 5-6 minutes.

    Then transfer the fried onion and carrots to the pot with the potatoes. Season the soup with salt and pepper, and continue cooking until the vegetables are done.

    2-3 minutes before cooking is complete, drain the brine from the canned beans and transfer the beans to the pot.

    As soon as the soup is ready, add finely chopped herbs. Cover with a lid and let it sit for a while.
