Vegan avocado salad
Description
Minimal effort — excellent result. Those who have fasted know that maintaining a healthy diet while following church canons is quite challenging. One of the most beneficial fruits during Lent is avocado, as it's both fasting-friendly and highly caloric, filling. And it can be used in various ways. For example, you can make this Lenten avocado salad. You can add absolutely any vegetables to it. Here's my version: 1. Peel the avocado and cut it into small cubes. Dice the tomatoes, radishes, and cucumbers into pieces of roughly the same size. Finely chop the onion and herbs. 2. Combine all the chopped vegetables in a salad bowl. Dress the salad. If you consume olive oil during the fast, use it as dressing; if not, lemon juice works very well. Besides, the tomatoes will release their own juice, making the salad juicy. 3. Season with salt and pepper—and that's it, your Lenten avocado salad is ready. It turns out very tasty: cucumbers and radishes add crunch, while avocado brings softness... In short, it's worth trying. Serve immediately.
