
Vegan Bean Puree Soup

Peel the onion and pepper, finely chop, and simmer in vegetable oil until soft.

We wash the tomatoes, then place them in boiling water and easily remove the skin. Cut the flesh into 3-4 pieces.

To the onion and pepper, pour in the bean broth and add half of the cooked beans.

Simmer over low heat for 7-8 minutes, stirring.

Remove the soup from the heat and let it cool. Pour it into the blender container and blend until smooth.

Add the tomatoes and blend until smooth together with them. Return the puree to the saucepan.

Add the remaining beans. Also add garlic and allspice. Bring the soup to a boil, reduce the heat, and simmer for another 20 minutes.

Serve the soup garnished with coriander, basil, and croutons.
