
Vegan sorrel borscht
Description
The recipe won't take much time. Preparing a vegan sorrel borscht at home is quite simple, whether using a multicooker or the stovetop. You can use plain water, but I recommend first preparing a vegetable broth with spices and roots—this will make the borscht even more delicious and aromatic. Serve the soup with croutons and vegan mayonnaise. The soup is ready to serve.

1. Here is a rather modest and affordable set of ingredients you will need if you decide to prepare a vegan borscht with sorrel in your kitchen.

2. Pour a little oil into the bottom of the multicooker bowl and turn on the "Frying" mode. Peel and chop the onion. Add it to the bowl and fry for a couple of minutes.

3. Peel and grate the carrot. Add it to the onion and cook for another 5 minutes, stirring.

4. Grate the beet as well and sauté in the bowl for 6-7 minutes. You can also add garlic, sweet and hot peppers.

5. Add tomato or tomato paste (previously diluted in a small amount of water). Add a little salt, a spoonful of sugar, and a pinch of pepper.

6. Select the "Soup" mode and bring the contents of the pot to a boil. While waiting, peel the potatoes, cut them into small cubes, and add them to the pot.

7. Add the chopped sorrel. It can be fresh, frozen, or canned, for example.
