
Vegetarian borscht
Description
The soup is easy and quick to prepare. If you've decided to observe a fast, that's no reason to give up your favorite dishes, such as borscht. This vegetarian borscht will appeal not only to those who are fasting, but also to vegetarians. The soup is ready to serve.

1. To prepare a vegetarian borscht, we need to peel and dice the potatoes, cover them with water, and put them on to boil.

2. While the potatoes are boiling and coming to a boil, peel and chop the onion.

3. Peel and grate the carrots on a coarse grater.

4. Sauté the carrots and onions in vegetable oil until soft.

5. Peel the beetroot and grate it on a coarse grater. Add the grated beet to the pan with the other vegetables and sauté everything together. Fifteen minutes later, pour tomato paste diluted in a glass of water into the pan. Instead of tomato paste, you can use tomato juice.

6. While the sauté is cooking, add the chopped young cabbage to the boiling potato broth.

7. When the cabbage becomes soft, add the prepared sautéed vegetables to the broth. Tomato paste or tomato juice may turn out to be too sour. You can neutralize the acidity by adding sugar to the borscht. I used 1 tablespoon. Now add salt and spices. Cook until all the vegetables are done, about 15 minutes.
