Vegetarian cabbage soup with sauerkraut
Description
Right now I'll share with you a very simple recipe. Serve the soup hot.
Instructions
- 1
Step 1

Prepare the ingredients for the soup. The sauerkraut should not be too sour, preferably moderately sour. If it is very sour, rinse it under cold running water. Put the water for the soup on the stove and bring to a boil.
- 2
Step 2

Chop the onion, grate the carrot.
- 3
Step 3

Sauté the vegetables in vegetable oil. Use 2-3 tablespoons of refined oil.
- 4
Step 4

Add cabbage and tomato paste to boiling salted water. Cook the soup for 30 minutes.
- 5
Step 5

After 30 minutes, add spices and fried vegetables to the soup. Adjust salt to taste. If the soup is too sour, add one teaspoon (without a heap) of sugar.
- 6
Step 6

Prepare a flour roux for the soup. To do this, pour refined oil (1-2 tablespoons) into a dry skillet, heat it slightly, and add the flour.
- 7
Step 7

Stirring constantly, fry the flour until it turns creamy in color. Then pour in a little hot broth from the soup and mix until smooth. Add this mixture to the boiling soup.
- 8
Step 8

Stir the soup; the flour mixture will make it thicker. Add chopped dill, then turn off the heat. Let the soup steep for about 20 minutes. Serve hot.
