Perfect for lunch. Tomatoes are powerful antioxidants. That's why I especially recommend tomato soup to those who have caught a cold, have a sore throat, or a fever. Tomatoes also boost your mood, which is especially important during cold weather when it's gloomy and dark outside. Plus, they have an anti-aging effect. Of course, these aren't the only health benefits of tomatoes, but they are the most relevant ones for me personally. That's why I highly recommend everyone try tomato soup. Prepare a small saucepan. Melt the butter in it.

Fry the tomatoes in vegetable oil.

Then add water. Bring to a boil and simmer over medium heat for about 15 minutes.

Add basil. Cook for another five minutes. The tomatoes should soften and crack.

Mash the tomatoes with a fork directly in the resulting broth. Strain the soup into soup bowls, leaving the tomato pulp in the pot.
