
Tomato soup
Description
Hearty first course. I often make this soup when garden tomatoes ripen. This tomato soup can be served both cold and hot. This simple and fairly quick tomato soup recipe comes in handy both at home and at the cottage, especially if hungry guests drop by unexpectedly :) It requires just a few ingredients, yet the taste is absolutely delightful. Sprinkle with fresh herbs before serving and enjoy :) Good luck! Serve with herbs and sour cream.

Peel the garlic and finely chop or crush it. Lightly sauté in oil for a couple of minutes.

Peel the tomatoes and cut them into small cubes. Place in a saucepan, add fried garlic and oil, and bring to a boil. Finely chop half of the basil leaves and add to the tomatoes. Simmer for about 10 minutes.

Add the finely chopped bread and the remaining basil to the tomatoes and cook for another 10 minutes.

By this time, the tomatoes should have softened. If not, you can blend or mash them with a blender or potato masher—whichever you prefer :) If the soup turns out too thick, simply dilute it with water to the desired consistency.

Taste the soup and add salt, sugar, and pepper if needed. Grate the cheese, add it to the soup, and mix well. Remove the soup pot from the stove. It's ready!
