
Poltava Borscht

Hearty and aromatic soup. Today I'll tell you how to properly cook authentic Poltava borscht. I just remembered a phrase: 90% of men pretend to enjoy delicious borscht :) Believe me, if you prepare Poltava borscht using this recipe, your man won't have to pretend at all. This borscht turns out superb—cooking Poltava borscht for my husband makes every day a special occasion :) So I highly recommend you master this recipe too; after all, there's nothing particularly complicated about it. The soup is ready to serve.

The set of ingredients is traditional for borscht. Meat and vegetables.

Rinse the piece of meat under running water. Take a pot, place the meat inside, pour in two liters of water, and cook the broth for approximately 30–40 minutes.

When the broth is ready, add the carrots and beets cut into thin strips.

Prepare the remaining vegetables. Thinly slice the cabbage, cut the potatoes into small cubes, and dice the tomatoes and peppers even finer.

We start preparing the sauté. Heat oil in a frying pan, add finely chopped onion.

When the onion turns golden, add the tomatoes to the pan.

After a couple of minutes, add tomato paste and a couple of tablespoons of sour cream to the pan.

Mix well and let it simmer. When the sour cream has completely evaporated and a layer of translucent oil appears on the surface of the sauté, remove the sauté from the heat.

Meanwhile, take the piece of meat out of the broth.

When the meat has cooled enough to handle, chop it into small pieces and return it to the pot.

After this, add the potatoes to the pot.

After 10 minutes, add cabbage to the pot. Continue cooking.

After a few more minutes, add pepper to the borscht. Continue cooking over medium heat.

While the borscht is cooking, prepare the seasoning. The seasoning is the most important element of borscht; without it, borscht is not borscht. To do this, finely chop parsley, garlic, and pork fat.

Grind the three above-mentioned ingredients using a mortar.

Now we move on to the final stage of preparing our borscht. First, add salt, sugar, and black pepper to taste.

Taste the borscht. If something is off, adjust by adding spices or tomato paste. If everything is fine, add our vegetable sauté to the pot.

Finally, add our dressing to the pot. Cook for another 1-2 minutes, then remove from heat, cover with a lid, and let it steep for at least 10-15 minutes.
