
Eggplant puree
Description
Perfect for lunch. If you love eggplants and want to experiment, make eggplant purée at home. This dish is wonderful served warm or hot for lunch or even dinner. Garnish with a sprig of thyme or parsley when serving. Ladle onto plates and serve.

Step 1

1. Slice the eggplants, but first peel off their skin. Now lightly salt them and let sit for 15 minutes to remove all the bitterness.

2. Transfer them to a frying pan and add a little garlic. Fry until cooked, preferably in olive oil.

3. Now sauté finely chopped onion in a small saucepan. You can add no more than 1 tablespoon of olive oil for frying.

4. When the onion is ready, add the eggplants, mix and let it sit for a while. Then blend everything with an immersion blender, season with salt and spices to taste.

5. Serve in a deep plate as a purée soup. This eggplant purée is best enjoyed hot when made at home.
