
Spicy salad of cucumbers and carrots
Description
Minimum effort — excellent result. This light and fresh vegetable salad with cashews will fit perfectly into any menu: diet or not, meat-based or vegetarian. It's dressed not with heavy mayonnaise, but with apple cider vinegar. Apple cider vinegar contains malic, oxalic, lactic, citric, and acetic acids—and that's not the whole list! Apple cider vinegar is also rich in beneficial vitamins. I'll tell you how. Can be served immediately.

Wash the vegetables and herbs, and peel the carrot.

Toast the nuts in a dry skillet until golden brown, then chop them. Cut the cucumbers into large half-rings and lightly press to remove as much liquid as possible. Grate the carrots on a Korean-style mandoline. Finely chop the cilantro and cut the green onions into large pieces.

In a deep bowl, mix all the ingredients and dress with a mixture of vinegar, salt, and sugar. Sprinkle with crushed cashew nuts.
