
Spicy Corn Soup
Description
A hearty first course. The soup base can be made with either fresh or canned corn. The latter option saves a lot of time, so I'll demonstrate exactly that version. Cream is optional—you can easily do without it. I recommend serving this soup with roasted tomatoes and corn; it will be absolutely delicious. But I'll explain everything step by step.

1. Heat vegetable oil in a saucepan. Add finely chopped onion and garlic pressed through a garlic press. Sauté for a few minutes over medium heat, stirring.

2. Place some corn kernels and cherry tomatoes on a baking sheet. Bake in a preheated oven at 250 degrees for 5–10 minutes, until browned.

3. Add salt and spices to the pot for flavor.

4. Place the corn, pour in the water or broth.

5. Cook for about 5-7 minutes until the corn is tender. Then blend with an immersion blender.

6. Pour in the cream, place over heat and warm, without bringing to a boil.

7. Let the baked vegetables cool for a few minutes, add a few drops of balsamic vinegar, and serve with the soup.
