
Barley with dried mushrooms

Perfect for lunch. Let's cook barley with dried mushrooms: 1. Soak the barley and mushrooms in water beforehand for 12 hours. 2. Pour about 1.5 liters of water into a pot. Add the soaked barley and mushrooms. 3. Simmer everything over low heat for about 30 minutes. 4. Add diced potatoes to the soup. Cook for about 5 minutes, then add the next ingredient. 5. While the soup is simmering, sauté chopped onion and carrots in a frying pan for a couple of minutes. 6. Add the sautéed onion and carrots to the soup, along with celery and a bay leaf. Season with salt and pepper to taste. 7. After a few more minutes, remove the soup from heat. 8. Serve hot, garnished with finely chopped dill and a spoonful of sour cream. This is the simplest recipe for barley with dried mushrooms, taking no more than an hour to prepare. Serve the soup hot.
