
Vegetable soup with pork
Description
The soup is simple and quick to prepare. For some reason, this vegetable soup with pork is very rarely made, and many housewives have never even heard of it or know how to cook it. I don't understand why such a delicious soup isn't popular among our cooks. As you can see from my photo recipe, vegetable soup with pork is very easy to make. In the end, you'll get a wonderful, rich, and hearty soup. You can enjoy it with lard or garlic, bread or horseradish, but most importantly—add plenty of fresh herbs and enjoy. The soup is ready to serve.

Step 1

Prepare the broth: pour water into a 3-liter pot and bring it to a boil. Add the meat (on the bone or boneless, depending on your preference). Once the meat is added, season the future soup with salt and pepper. Peel the potatoes, beets, carrots, onion, and garlic. Wash the vegetables and dry them. Cut the beets into thin strips and add them to the broth. Dice the potatoes into small cubes. Cut the cabbage into small pieces and also add it to the broth. Stir the soup and continue cooking for another 40-50 minutes.

While the vegetable soup with pork is cooking, prepare the sauté. Peel and grate the onion and carrot. I usually use a coarse grater. Heat oil in a frying pan, then add the carrot and onion. Fry, stirring constantly. Cut the tomatoes into small pieces and add them to the vegetables in the pan.

After the vegetables are sautéed, transfer them from the skillet into the broth and mix. Place herbs (such as parsley, dill) and garlic into a mortar, chop the bacon, and add it as well. Grind the ingredients thoroughly until you get a more or less homogeneous mixture. Once the mixture is ready, transfer it into the broth and mix well again.

Remove the meat from the broth and cut it into small pieces. Discard the bones, if the meat was on the bone, or leave them in the soup. Return the small pieces of pork to the soup and stir once more. Simmer the vegetable soup with pork over low heat for another 30-40 minutes. Once the borscht is ready, transfer it to serving bowls and serve.
