
Vegetable soup with pumpkin
Description
A hearty first course. Pumpkin soups are usually seen in pureed form, but that's not necessary at all. To prepare a vegetable pumpkin soup, simply boil it in broth, adding chickpeas as well. By the way, chickpeas are nutritious and pair perfectly with pumpkin. The broth can be either chicken or vegetable.

Step 1

You can use dry or canned chickpeas. I usually take dry chickpeas, soak them overnight in water (preferably hot). Then I cook the chickpeas further until they are half-cooked.

Wash all the vegetables, peel and cut them into cubes. Onions, parsnip, and carrots should be cut into small cubes, while fennel, potatoes, and pumpkin should be cut into medium or even large cubes. Finely chop the garlic and ginger, or grate the ginger on a fine grater.

Pour vegetable oil (3 tbsp) into a saucepan and place over heat. Add onion, fennel, parsnip, carrot, potato, ginger, and garlic to the saucepan. Pour in 0.5 cup of water. Simmer the vegetables for about 10 minutes. Then season with salt and pepper, add other spices to taste, and continue simmering for another 10 minutes.

Then add the pumpkin and chickpeas. Pour in the broth and simmer for about 30 minutes, until the pumpkin is cooked.

Add lemon juice to the ready pumpkin vegetable soup before serving, and you can garnish it with fresh herbs. By the way, croutons go great with the soup too.
