
Vegetable soup with red beans
Description
Perfect for lunch. Preparing a delicious and light soup is easy if you have all the necessary ingredients on hand. Beans are often added to vegetable soups. If you don't have time to wait for the beans to cook, use ready-made canned beans. Serve the soup hot.

Step 1

Bring water to a boil and pour the boiling water over the tomatoes, previously making a cross-shaped incision at the tip of each tomato. After a couple of minutes, remove the tomatoes from the hot water and peel off the skin. Cut the tomatoes into cubes.

Wash the carrots and celery. Peel the onion and chop it as finely as possible. Slice the carrots and celery into half-rings or thin strips.

Place a heavy-bottomed pot on the stove and pour in vegetable oil. When the oil is well heated, sauté the previously prepared vegetables in it. Then add the zucchini cut into cubes and cook until tender.

Add the peeled chopped tomatoes, tomato paste, and garlic pressed through a garlic press to the pot. Season with salt and pepper. Simmer all ingredients for five minutes.

Pour clean drinking water into a saucepan and wait for the soup to boil. Simmer over low heat for twenty minutes. Then add canned red beans. Cook for another five minutes. Sprinkle with fresh herbs before serving, if desired.
