
Vegetable soup on meat broth
Description
Earlier, I already showed you how I make broth and mentioned that I like to freeze and store it. This way, it's very convenient and quick to prepare this vegetable soup on meat broth when I come home from work. Especially since I always have frozen vegetables in my freezer. First, let's prepare the broth. If you already have ready-made broth, you can skip these steps.

Fill a pot with water and bring it to a boil. Add the pork ribs to the pot; when the water boils again, foam will begin to appear on the surface—be sure to skim it off. Cook the meat for 20 minutes.

Then add the whole carrot and whole onion to the pot. I also add parsley stems without the leaves. Simmer everything for 10 minutes, then season the broth with salt and pepper. Cook for another 10 minutes.

Remove the ribs from the broth, separate the meat from the bones, and add it to the soup at the end of cooking, if desired. Also remove the carrots, onion, and parsley stems from the broth. You can strain the broth. This broth can be frozen and stored for several months.

Now let's start preparing the soup itself. Peel the potatoes and prepare the vegetable mix—I have green peas, corn, asparagus, bell pepper, and carrots.

Cut the potatoes into small pieces.

Add the potatoes to the boiling broth and cook until tender, 15–25 minutes, depending on the potato variety.

Meanwhile, finely chop the second onion.

Sauté the onion in vegetable oil until translucent.

Add the frozen vegetables to the skillet and sauté lightly.

Sprinkle the vegetables with paprika and black pepper.

When the potatoes become soft, add the vegetables to the soup. Cook for another 5-10 minutes until all ingredients are done.
