
Vegetable soup for diabetics
Description
A hearty first course. Vegetables should definitely be part of anyone's diet, but for diabetics, it's important to control the amount of potatoes, bell peppers, and carrots. The other vegetables from the ingredient list can be consumed in larger portions. Cabbage and celery must be included in the diet of people with diabetes. Unfortunately, there is no exact list of recommended foods for people with type 1 or type 2 diabetes. One thing is clear—there are more exceptions than rules. Therefore, adjust the ingredient list according to your individual needs. Serve with fresh herbs and sour cream.

Prepare the ingredients.

Cut the potatoes into small pieces and grate the carrots. Add the vegetables to a pot of boiling water.

Add finely chopped onion and parsnip root.
