Instructions
- 1
Step 1

Prepare the listed ingredients.
- 2
Step 2

Peel the potatoes, carrots, and onion, then rinse them in water. Cut the potatoes into slices or cubes, slice the carrots into rounds or half-rings, and add both to a container: a pot or saucepan.
- 3
Step 3

Wash the zucchini in water and cut off the ends. Use a young zucchini without a tough skin and seeds inside. Cut half of the zucchini into medium cubes and half of the onion into small pieces. Add the chopped ingredients to a bowl.

Step 4

Season with salt, pour in water, and place the container on the stove. Boil the vegetables until soft, about 20 minutes after the liquid in the container comes to a boil. Carrots and potatoes take the longest to cook—they are denser, so check doneness using them.

Step 5

Transfer the soft vegetables together with the vegetable broth into a deep container.
- 6
Step 6

Puree them with an immersion blender until smooth. If the soup becomes too thick, you can add a little boiling water.

Step 7

Taste the soup and pour it into deep plates.
