
Vegetable broth in a steamer
Description
Hearty and aromatic soup. Vegetable broth made in a steamer is incomparable to the broth you can prepare in an ordinary pot. I personally bought my steamer primarily for making broths—such delicious, clear, and at the same time rich broths can never be achieved in a regular pot. Here I explain how to cook vegetable broth in a steamer and what ingredients to use. This broth can be served as a first course or used later in preparing various other soups and main dishes. Serve with fresh herbs and sour cream.

Ingredients are quite simple and inexpensive, nothing unusual. If desired, you can change the proportions and combinations of vegetables—it won't be worse or better, just different.

We cut all the ingredients, except for the sprouted soybeans, into small pieces at will. We put all the ingredients (well, except for the oil and spices) into a piece of gauze—this is done so that the vegetables do not fall into the broth during cooking.

Place the gauze with ingredients into the steamer, add green tea (mandatory), and a little salt.

Finally, add a little vegetable oil to the vegetables.

Pour water into a pot placed under the steamer—approximately 2 liters.

Place the steamer basket over the pot and cover with a lid. Bring to a boil over high heat, then reduce the heat to medium and simmer the broth for exactly 1 hour, covered.

After an hour, the broth will be almost ready. Now do the following: carefully remove the gauze with vegetables from the steamer, and without taking the vegetables out of the gauze, use a masher to squeeze out as much vegetable juice as possible. Naturally, do this over a bowl. Now you can discard the vegetables and mix the extracted vegetable juice with the broth. Bring the juice-enriched broth to a boil once again, adjust the seasoning with salt and pepper, then remove from heat. Let it steep, covered, for about 10 minutes—and that's it, your vegetable broth made in a steamer is ready! :)
