
Refreshing cucumber salad with peanuts
Description
Perfect for everyday meals. Many salad dressings include a sweet ingredient, usually honey. But I recommend using rosehip syrup instead. It's less sweet, blends perfectly with other ingredients, has a mild aroma that always complements the other components, and is more affordable. The dressing tastes wonderful! Try it yourself and see. Garnish if desired and serve.

The ingredients should be chilled, then the salad will be tastier. Washed and dried cucumbers cut lengthwise and slice thinly. Place in a large bowl.

Tear the washed and thoroughly dried lettuce leaves into medium-sized pieces. Coarsely chop the coriander leaves. Add to the cucumbers and mix.

Coarsely crush the salted peanuts in a mortar or chop with a knife. Add to the bowl with vegetables.

Peel the ginger and finely chop it. Place it in a jar with a screw-top lid, then add soy sauce, syrup, lemon juice, chili flakes, and olive oil. Close the jar with the lid and shake vigorously.

Drizzle the salad with dressing and gently mix. It's convenient to do this with chopsticks, as the vegetables won't get crushed.
