
Spicy pumpkin-carrot soup
Description
Hearty and aromatic soup. I recommend diversifying your menu of first courses with this light soup. The soup is prepared without potatoes; for heartiness, meat mince is added. Details: ladle into bowls and serve.

Prepare the vegetables. Wash and peel them.

Grate the carrot on a coarse grater, cut the pumpkin into small cubes, and finely chop the onion and garlic. Heat vegetable oil in a heavy-bottomed pot. Fry the carrot and pumpkin until golden brown for 3–5 minutes.

Pour in hot water, bring to a boil, and simmer over low heat until the vegetables are cooked.

Add salt and chili pepper. Blend the vegetables with a blender, bring to a boil, and cook for another 2 minutes.
