
Spicy cucumber salad for winter
Description
Perfect for everyday meals. You can store the ready-made salad in the refrigerator or cellar for up to one year. Serve it cold. You can adjust the spiciness to taste during cooking; however, I prefer the spicy version. You can add green tomatoes, garlic, and hot pepper. Garnish as desired and serve.

1. Wash the peppers and cut them in half, then remove the seeds and chop them coarsely. Peel and finely chop the onion.

2. Wash the cucumbers, cut off their ends, then slice them into small strips or shred using a Korean carrot grater.

3. Place cucumbers, peppers, and onions into a large saucepan, pour in half of the apple cider vinegar, and set the saucepan over heat. Simmer for 30 minutes. Drain the contents of the saucepan through a sieve, discard the liquid, return the vegetables to the saucepan, and add all the spices and vinegar. Cook for another 5 minutes, then remove the saucepan from the heat.

4. Wash the jars with lids and dry thoroughly, then fill each with the prepared vegetable mixture.

5. Seal the jars with lids and place them in a pot of boiling water, with a cotton cloth laid on the bottom. Sterilize the jars for 10 minutes.

6. Carefully remove the jars using tongs and cool at room temperature.
