
Spicy Bean Soup
Description
A hearty first course. Bean soups are rich in protein. Adding fresh vegetables will enrich the soup with vitamins, while smoked meats will enhance its flavor. Ladle into bowls and serve.

Soak the beans for three hours, then boil until half-cooked. Drain the broth and rinse the beans.

Place the smoked ham hock in cold water and bring to a boil. After boiling for a couple of minutes, discard the broth, rinse the ham hock and the pot, then add 1.5 liters of fresh water. Cook the ham hock for half an hour, then remove it, let it cool slightly, and shred the meat into pieces.

Put the potatoes, cut into large cubes, into the broth. After boiling, skim off the foam and add the prepared beans.

Sauté the onion, cut into cubes, and garlic, cut into large pieces, in oil until golden.

Cut the carrots and peppers into strips.

Add the vegetables to the onion and continue sautéing. Then add the tomato paste and heat thoroughly. Pour in the strained tomatoes and simmer for a couple of minutes.

Add the chicken pieces, sautéed vegetables, and dry spices to the soup. Bring to a boil.

Turn off the heat, add a whole dried hot pepper to the soup, let it steep for about 15 minutes. Before serving, remove the pepper from the pot. You can place it in the bowl for those who like it spicy.
