Boiled spinach with soy and sesame. Oshitashi is one of the most common side dishes in Japanese restaurants. The taste is delicate, clean, and perfectly balanced.

Bring water to a boil in a large pot, adding a little salt. Place the previously rinsed spinach into the boiling water and blanch for 1 minute.

Without waiting for the spinach to wilt, transfer it to a bowl with cold water and ice.

Remove the spinach from the water and squeeze it well, being careful not to press too hard on the spinach.

Roughly tear spinach into separate leaves.
