Description
Perfect for lunch. The main ingredients of this soup are not only chickpeas and noodles, but also herbs (12 varieties). You can use fewer types, but cilantro and mint are essential. Although, in my opinion, this depends on taste and herb availability. Serve with fresh herbs and sour cream.

Step 1

Soak the chickpeas in plenty of water for at least 4 hours in advance, then drain the water. Rinse the herbs under cool water. Peel and wash the vegetables.

Put the chickpeas into boiling water (or broth) and cook over low heat until tender.

Chop the onion, carrot, and garlic, and sauté in heated oil until golden. Add to the broth.

Add the homemade noodles to the soup and cook for 2-3 minutes until done.

Chop the herbs and add to the soup, season with salt and pepper to taste. Simmer for 1 minute, then remove from heat.

Can be served with thick yogurt or sour cream.
