
Olivier salad with sausage for the Year of the Rat

The recipe won't take much time. In fact, you can beautifully present any salad in the shape of a mouse, but Olivier salad looks absolutely fantastic, transforming from an everyday dish into a true festive, New Year's treat. Prepare all the necessary ingredients. Boil the eggs hard. Boil the carrots and potatoes in their skins until soft, then cool and peel.

Cut the sausage into cubes.

Peel the boiled eggs and also cut them into cubes.

Cut the carrots into cubes the same size. I add a lot of carrots—I really like them in the salad—but you can adjust the amount to your taste.

But I don't add too much potato—roughly the same amount as the carrots.

Cut the pickled cucumbers into small cubes.

And finally, add the canned peas.

Dress everything with mayonnaise and mix. Season with salt to taste. Our Olivier salad is ready. It only remains to decorate it nicely.

I placed the salad on a flat plate, shaped it like a mouse, used blue onion for the ears and tail, and made the eyes from rowan berries or peppercorns. Add a bit of parsley as well.
