
Beet and kefir okroshka
Description
A hearty first course. Not everyone likes kvass-based okroshka. Many prefer dairy-based versions. Try making okroshka with kefir and carbonated mineral water—it's a delicious combination. Add boiled young beetroot; it will give the okroshka a slightly sweet taste and a delicate romantic pink color. Serve the soup hot.

Finely dice the sausage into small cubes.

Finely chop the greens.

Cut half of the cucumbers into small cubes, and grate the other half on a coarse vegetable grater.

Grate the peeled radish on a grater.

Coarsely chop the hard-boiled eggs.

Place all the ingredients into a large saucepan. Season the vegetable mixture with salt and pepper. Pour in the cold kefir, add grated horseradish and lemon juice.

Add the boiled or baked beet, grated on a fine grater, last. Pour in one or two glasses of sparkling mineral water (depending on your preference for a thicker or thinner consistency). Taste and adjust the seasoning for salt and acidity.
