Azerbaijani-style okroshka

Description

The recipe won't take much time. Unlike our classic okroshka, this version doesn't include sausage and potatoes. It's made exclusively from vegetables—radishes, cucumbers, greens—and eggs are also added. For the dressing, we use kefir and water. The soup is ready to serve.

    Prepare all the ingredients.

    Rinse the radish and dry it, then trim off the ends. Cut the radish into small cubes.

    Next, cut the fresh cucumber into small cubes and add it to the bowl with the radish.

    Boil chicken eggs for 10 minutes in salted water. Peel the eggs and cut them into small cubes. Add the eggs to a bowl.

    Rinse the herbs, chop finely, and add to the common container. Add salt and pepper to taste, and pour in the lemon juice.

    Pour the okroshka with kefir and water. Mix and chill for 30 minutes, then serve.
