A hearty first course. Okroshka made with buttermilk and mayonnaise turns out very tasty and filling. The buttermilk provides the necessary tanginess. Use traditional vegetables—boiled potatoes and fresh cucumbers. Also add boiled sausage, hard-boiled eggs, and fresh herbs. Serve the soup hot.
