
Okroshka on mineral water
Description
A hearty first course. Okroshka, the pride and joy of traditional Russian cuisine, should ideally be prepared exclusively with kvass. However, we, people of the twenty-first century, due to the difficulty of finding good quality bread kvass, can make do with okroshka made using mineral water—fortunately, it turns out no worse than the kvass version. It disappears in no time during hot summer days. Good luck with your cooking and ;) Serve the soup hot.

Step 1

First, boil the potatoes in their skins and hard-boil the eggs. Then peel both and let them cool.

We will thoroughly wash the vegetables under running water, then let them dry.

Cut the cucumbers into small cubes. If the cucumbers are old, peel them.

Slice the radish as thinly as possible.

We cut the potatoes slightly larger than the cucumbers. Finely chop the herbs.

Finally, add finely chopped boiled eggs (chopped about the same size as the cucumbers) to the okroshka.

Add sour cream, mustard, salt, and pepper to the vegetables. Pour in mineral water and mix until the ingredients are evenly combined.

Let the okroshka chill in the refrigerator for at least half an hour, then serve cold. Enjoy!
