
Mayonnaise-based okroshka
Description
A hearty first course. Friends who have tried my mayonnaise-based okroshka always ask how to make it. Well, I'm sharing the secret! It's worth noting that the mayonnaise adds a piquant flavor and a new taste to the okroshka. Be sure to try it! I'd also recommend making a large portion right away, as everyone without exception will ask for seconds. Serve with fresh herbs and sour cream.

1. Prepare the necessary ingredients.

2. Place the eggs and potatoes in a saucepan, cover with cold water, bring to a boil, reduce the heat, and cook for 8–10 minutes until the eggs are done. Remove the eggs from the saucepan and transfer them to cold water to cool. Continue cooking the potatoes for another 10 minutes (until tender), then drain the water and let them cool. Peel the eggs and potatoes, then cut them into small cubes.

3. Cut the sausage into small cubes as well.

4. Thoroughly wash the fresh vegetables and trim the ends. Finely chop the herbs, radishes, and cucumbers.

5. Mix the whey and mayonnaise until smooth. Add the chopped ingredients, mix, then add salt to taste. In hot weather, you can add ice cubes to the finished soup.
