
Classic okroshka with sausage
Description
A hearty and aromatic soup. Okroshka is a wonderful cold dish that can be enjoyed not only in summer. Even children love okroshka (especially during hot weather). This recipe includes sausage, eggs, and vegetables. Don't forget the fresh herbs—okroshka truly "loves" them. In this case, the soup is dressed with kefir and mineral water. Serve the soup cold.

1. Many people prepare kvass soup differently: with meat, chicken, sausage, using kefir, mineral water, kvass, etc. I suggest a classic recipe for kvass soup with sausage. So, take boiled sausage and cut it into small cubes.

2. Boil the eggs hard, then let them cool down. Dice the eggs and cucumbers. Add them to the pot with the sausage.

3. Meanwhile, boil the potatoes in their skins. You can chop the potatoes or grate them on a medium grater, whichever you prefer.

4. Mix all the ingredients and add chopped herbs to taste. Radish would also be a good addition, but that's up to you.

5. Pour kefir over all the contents in the pot; you can dilute it slightly with mineral water. Place the pot in the refrigerator for half an hour.

6. Don't skimp on the greens, as okroshka loves them dearly. After some time, the classic sausage okroshka will be ready! If you don't have time to let it steep, you can eat it right away. Many people prefer to add the dressing directly to their bowl, which also tastes delicious. If you have homemade kvass, feel free to use it for dressing.
